“Quick lad, pipe me a log thing!” I have never seen such wanton, gratuitous use of a pipping bag in my life. This is a so called ‘savory Swiss roll’…. Again, not really sure whats going on here other then the excess pipping. You do the math.

“A little farmhouse revival” in downtown Toronto

Earlier this month, I had the pleasure of being invited to dine at the Chef’s table at Marben, a cozy and cool restaurant specializing in the art of butchery and charcuterie. From what I understand, the imaginative and passionate kitchen staff of Marben are responsible for making nearly every single item that hits the table, right down to the bread and condiments. What makes things even better is the fact that most, if not all, of the produce and meats served are grown and purchased within 100km of Toronto, meaning guests are served the freshest ingredients, and local farmers are supported. Awesome!

Everything from clothes and tents to appliances and books were produced in record numbers by the vast faceless hoards of assembly line workers.

EAT YOUR COLOURS

I really like colourful food ~ vibrant squash, heirloom tomatoes, black garlic, peppers, beans, salts (the list is endless). Germans call these truffle potatoes. Upon opening the pack it’s easy to see these are from the ancient Andes culture called Peruvian purple. They have a very long history stretching continents.The skin is dark, almost black and spotted with many eyes. Inside is a vibrant purple flesh. After cooking them the skin becomes almost dark grey and the flesh is an amazing deep purple. These Peruvian purples are the mealiest of all the fingerlings. They are great roasted or fried. Mix them with redskin and white potatoes for a vibrant potato salad. I like mine with a simple vinaigrette tossed with steamed green beans. I recently saw them on a menu in Potsdam, which is close to Berlin, Germany. They served them boiled with a side of quark (German sort of cottage cheese).

Epic Food Scan 7: A Taste Of Riddley Scott

As you can clearly see, this dish is a tribute to Riddley Scotts sci-fi masterpiece, Alien (that’s the first one for those keeping score).

The trick to this dish is to slowly lean over the gently pulsating orbs, innocently taking in the oddly captivating visuals, totally unaware of impending doom. While lost in the rapture of eggy-gooey bliss, a giant crab like creature launches from within and latches on to your face in order to impregnate you with an alien being which will burst forth from your rib cage somewhere between dessert and coffee. Noveau cuisine for sure.

Here we go with another food scan. This wonderful looking culinary asteroid is an aspic salad. While I do not doubt that the skill level required to make this epic creation is pretty high, the results are less then appetizing.
