First night of the $20 Challenge

Last night we created a meal from scratch that was both economical and extremely tasty. Our asian inspired meal included a spicy vegetable stir-fry (zucchini, snow peas, broccoli, botton mushrooms and green peppers), coconut chicken and a serving of rice. The chicken was sauteed off with onions and then simmered with coconut milk and cream. It was a very healthy meal and a wonderful way to enjoy a quiet evening out of the cold.

For dessert, we ended the night with a rice pudding. Simply made by combining a can of custard and about 1L of milk with some vanilla extract and rice. Baked off in the oven for about 45 min.

This meal fed two people well and still had leftovers. Since we bought chicken on sale, $5.70 for skinless chicken breasts (two half chicken pieces) we had enough poultry left over, uncooked, for yet another meal. The rice was $5 for a large 2kg bag that can be used at least another 2 times and same with the bunch of broccoli we got. Therefore, for way under $20 we were able to have a very healthy and filling meal that left some staple items in our pantry/fridge until the next great meal.
